Buttermilk Cornbread

This is an easy cornbread recipe that really beats the mix in the box! Take a few extra minutes to prepare this and you won't be disappointed! Enjoy!

Ingredients

1/2 cup butter or margarine

1/2 cup sugar

2 Eggs

1 cup buttermilk

1/2 teaspoon baking soda

1 cup cornmeal

1/2 cup whole wheat flour

1/2 cup white flour

1/2 teaspoon salt


Directions

Preheat oven to 375 degrees. Grease an 8 inch square pan. Melt butter or margarine in large microwavable bowl. Remove and stir in sugar. Add eggs and stir until well blended. Combine buttermilk and baking soda and stir into mixture in pan. Stir in cornmeal, flour and salt until well blended. Pour batter into the prepared pan. Bake in the preheated oven for about 30 minutes or until lightly browned and toothpick inserted in center comes out clean. ***If you do not have buttermilk, use 1 TBSP less milk and add 1 TBSP lemon juice or vinegar and let stand for five minutes before preparing recipe.

This is honestly BETTER than the ole standby Jiffy Cornbread Mix, which was our favorite. This cornbread turns out JUST LIKE it looks in the photo..moist, and oh so flavorful. We ate the whole pan in one sitting (3 of us). I used 2 TBL. of apple cider vinegar in the milk for about an hour before making up the recipe.

Incredible cornbread recipe. Might be the wheat flour that sets this recipe apart from the others, but it eats more like cake than it does cornbread. This is by far the best buttermilk cornbread recipe that I have ever prepared. It certainly did not last the night at our house. Thanks for contributing!

This cornbread is fabulous! As my husband noted when he first tried it, it cuts so well and is moist and not dry or crumbly like many cornbread recipes!
