Cannellini Bean Stew

Ingredients

4 15-ounce cans cannellini beans drained

2 veggie bouillon cubes

16 ounces water

2 cloves garlic smashed

6 carrots diced

3 cups fresh spinach leaves

salt

pepper

2 tablespoons Olive oil


Directions

In a large saucepan, over medium heat, bring the beans, bouillon, water, garlic, and carrots to a boil. Cover, reduce heat, and simmer for 15 minutes. Add the spinach, salt, and pepper and stir for 1 minute. Serve into bowls and drizzle with olive oil.
