Caribbean Turkey and Sweet Potato Soup

Ingredients

Nonstick cooking spray

1 1/2 pounds Turkey breast boneless, cut into 1-inch pieces

1/2 cup Onion chopped

2 tablespoons Fresh ginger finely chopped

1 teaspoon Allspice ground

1 teaspoon Ground cumin

1/2 teaspoon Salt

3/4 teaspoon Black pepper

1/2 teaspoon Garlic Salt

1/2 teaspoon Dried thyme crushed

2 large Sweet potatoes peeled and cut into 2-inch pieces

2 cups Chicken broth reduced sodium

1 14-oz can light coconut milk unsweetened

2 cups white rice cooked

1 15-oz can Black beans rinsed and drained

3 tablespoons Fresh Cilantro snipped

2 tablespoons Lime Juice


Directions

1. Lightly coat a 4- to 5- slow cooker with cooking spray. Place turkey in prepared cooker. 2. In a small bowl, combine onion, ginger, allspice, cumin, 1/4 teaspoon of the salt, 1/2 teaspoon of the pepper, the garlic salt, and thyme. Pour over turkey; stir to coat. Add sweet potatoes, broth, and coconut milk. 3. Cover and cook on low 4 1/2 hours, stirring in rice, beans, and remaining 1/4 teaspoon salt and 1/4 teaspoon pepper the last 10 minutes of cooking. 4. Stir in cilantro and lime juice.
