Carne Guisada Con Papas

Ingredients

Tomato puree

Potatoes

2 lb Pork; (butt) up to 3

Chile powder

Cumin

Vegetable oil

Onions

Garlic

Salt

Chicken stock or water


Directions

In a large heavy pan or dutch oven, heat oil then add pork. once lightly brown add onions and saute. Add potatoes, and saute some then add chicken stock,tomato puree, garlic, and everything else to taste (heavy on the cumin, lighter on the chile powder is a good combo) Cook until very tender. Tastes like restaurant guisada in San Antonio. I left out the potato, and used 2 parts comino to 1 part Chile powder. GREAT RECIPE!
