Casey's Chocolate/PB mole

Ingredients

1 Morita torn, stemmed, seeded

2 Chipotle torn, stemmed, seeded

1 Dried Hatch Chile (hot) torn, stemmed, seeded

2 Dried Hatch Chile (mild) torn, stemmed, seeded

1 Guajillo torn, stemmed, seeded

1 pint+ Chocolate Stout (Sam Smith is cheapest) adjust quantity of broth to equal 4 cups

2 cup Chicken broth can be any other broth

10 Raisins

8 Deglet dates Pitted

8 Dayri dates

2 tablespoons Olive oil

8-10 Garlic cloves smashed

1 Onion Large, yellow, diced

2 teaspoons Chili powder

2 teaspoons Cumin seeds

2 teaspoons Coriander seeds

1 teaspoon Dried oregano

1 teaspoon Ceylon cinnamon

1/2 teaspoon Nutmeg

1/2 teaspoon Ground cloves

1 teaspoon Salt

1/3 cup Peanut butter Emma's peanut butter, preferably

2 oz Baking chocolate can be any sweetness


Directions

1. Tear chiles apart and toast in skillet 3-4 mins 2. Place chiles in a pot, and cover with broth and beer. Bring to a boil, then cover and turn down to simmer 10 mins 3. Add dates and raisins, simmer for 10 more minutes and take off heat, then put in the blender. 4. Saute onions and garlic in olive oil, until golden brown. Add spices and stir 1-2 more minutes to toast spices. 5. Blend chile/dried fruit mixture and onion/spice mixture until smooth, like a smoothie. 6. Pour back into pot and heat over low. 7. Stir in salt, peanut butter, and chocolate. Unless you want very sweet mole, use unsweetened or bittersweet. Use semisweet for the sweetest mole
