Cast Iron Skillet Steak

Pan seared to perfection, you may find yourself skipping the grill and using grandma's cast iron skillet for steaks from now on!

Ingredients

1 strip Steak 1 1/2 - 2-inch thick

1 tbs Kosher salt

1 tbs Black pepper

1 tsp Garlic powder

1 tsp Cayenne pepper


Directions

Place cast iron skillet in oven and heat oven to 500 degrees. Bring steak(s) to room temperature. Season both sides with salt, pepper, garlic powder, and cayenne pepper. When oven reaches temperature, remove pan and place on range over high heat. Immediately place steak in the middle of hot, dry pan. Cook 30 seconds without moving. Turn with tongs and cook another 30 seconds, then put the pan straight into the oven for 2 minutes. Flip steak and cook for another 2 minutes. (This time is for medium rare steaks. If you prefer medium, add a minute to both of the oven turns.) Remove steak from pan, cover loosely with foil, and rest for 2 minutes. Serve whole or slice thin and fan onto plate.

This recipe was the best recipe ever! I have tried it with a strip steak and a T-bone both turned out tender and juicy. In the past I used my grill pan for steaks, I think I can now donate that pan to Goodwill :) Thanks for the recipe

Tried it with two 1" sirloins in the same pan at the same time. Turned out great!

I messed up and put all the spices on the steaks so they were a bit too spicy. Next time I'll sprinkle from the mixture instead. I still enjoyed it. Oh make sure you wear a really thick oven mit. I grabbed the hot handle when I was flipping it on the stove. And yes, you need the fan on hi.
