Healthy Cauliflower Side for Thanksgiving

Ingredients

2 Tbsp Olive oil

1/2 cup Green onion chopped

1/2 cup Celery diced

2 1/2 cups Cauliflower chopped

1 cup Mushrooms chopped

1/2 tsp Salt

1/2 tsp fresh ground pepper

1/4 cup Fresh parsley chopped

2 Tbsp Fresh rosemary chopped

1 Tbsp fresh sage chopped

1/2 cup vegetable or chicken broth


Directions

Heat oil in skillet over medium heat. Add onion, celery and sauté until soft, 7-8 minutes. Add cauliflower and mushrooms and season with salt and pepper. Cook until tender, 8-10 minutes. Add parsley, rosemary, sage and stir until combined, then pour over broth and cover with lid. Cook until all liquid is absorbed, about 15 minutes.
