Cheeseburger Taquitos with Spicy Aioli

The humble taquito and the juicy cheeseburger. Two of our favorite indulgences. We threw caution to the wind and mashed up these two grab and go treats for a tasty treat that hits all the right spots.

Ingredients

16 Corn tortillas

1 1/4 lb Ground beef 93/7

1/2 medium White Onion diced

1 tbsp Olive oil

1/2 cup Canned diced tomatoes drained

1 1/2 cups Shredded cheddar cheese

1/3 cup Dill pickles diced

2 tbsp Yellow mustard

1 tsp Ground black pepper

1/2 tsp Sea Salt

1/2 cup Mayonnaise

1 tbsp Dijon mustard

1 tbsp Dill pickle brine

1 tbsp Sriracha or hot sauce

1/4 tsp Cayenne pepper

1/2 tsp Ground black pepper

1/4 tsp Sea Salt


Directions

1. Add the olive oil to a skillet over medium heat. Add in the onions and cook for 3-5 minutes or until soft and almost translucent. 2. Add in the ground beef and cook until done, 5 minutes, stirring and breaking up the meat as it cooks. 3. Remove from the heat and drain the liquid out of the skillet. Stir in the tomatoes, cheese, and mustard until combined. Fold in the pickles and set aside. 4. Heat a dry, clean skillet over medium-low heat. Place a corn tortilla on the skillet and heat for 5-10 seconds on each side. Remove from the heat and immediately top with 1 ½ to 2 tbsp of ground beef mixture on the top 1/3 of the tortilla and roll into a cylinder, securing with toothpicks. Repeat with the remaining tortillas. 5. Place the taquitos in an air fryer at 350 degrees Fahrenheit for 12 minutes, flipping each taquito halfway through the cooking time. 6. Make the sauce while the taquitos are cooking by combining all ingredients in a small bowl and whisking until smooth and uniform. 7. Serve alongside the sauce while hot. Enjoy!
