Chicken and Mushroom Risotto

Ingredients

Olive oil

3/4 lb Chicken breasts boneless and skinless

1/2 cup onion

1 lb chopped mushrooms

1 tablespoon minced garlic

1 tablespoon Butter

1 1/2 cup Arborio rice

3/4 cup Dry white wine

4 3/4 cup chicken broth

1/2 cup chicken broth

2 Lemon wedges

1/4 teaspoon Salt

1/2 cup fresh, shredded parmesan cheese


Directions

In Dutch oven, heat 1 T olive oil over medium high heat. Add chicken and brown. Remove. Add 2 T olive oil - medium. Add onion until tender. Add mushrooms and garlic until tender. Add butter and rice. Stir. Add wine. Cook 2 minutes. Stir in 4 3/4 c broth, lemon and salt. Simmer over medium-low for 20 minutes stirring occasionally. Add chicken and 1/2 c broth. Cook until tender and heated thoroughly. Add cheese.
