Chicken soup with a Mexican twist - healthy!

1 1/2 lbs boneless chicken breasts
1 tablespoon olive oil
1 cup green onions chopped
2 each Jalapeno peppers seeded and minced (or leave seeds for spice)
2 cloves garlic
4 cans Low sodium chicken broth 14.5 oz cans
2 Roma Tomatoes seeded and diced
1/2 teaspoon Ground cumin
Salt and pepper to taste
1/3 cup Fresh Cilantro chopped
3 tablespoons Lime Juice
3 avocados peeled, cored and diced
tortilla chips optional
Monterey jack cheese optional
Sour cream optional
I loved this! I had red onion, so that's what I used. Also added a bouillon cube to jack up the flavor some. Served with cheese quesadillas for the picky ones.
HeidiLarsenLight and delicious with complex flavors! I added a ton more tomatoes but followed the recipe other than that. Enjoyed by all!
