Chicken, Black Bean, and Corn Fajitas

This was one of the first meals I experimented with once my husband and I started dating and it was a hit!! A real simple and quick go to meal that the whole family will love!!

Ingredients

2 cloves Garlic minced

3 Chicken breasts cut into thin strips

1 Green bell pepper sliced

1 Onion sliced

1 small container Mushrooms sliced

1 10 oz. can Diced tomatoes drained well

1/2 c. Salsa (your favorite kind)

1 10 3/4 oz. can Cream of chicken soup (mushroom, fiesta, nacho, cheddar cheese work too)

2 c. Corn (frozen or canned)

1 14.5 oz. can Black beans rinsed and drained

1 package Flour tortilla shells


Directions

1) Slice the chicken and place in a large skillet with the oil and garlic. On medium high heat, begin to cook chicken for about 5 minutes. 2) Next, slice the pepper and onion and add to the skillet along with the mushrooms. Allow to cook about 5 minutes to soften up. 3) Last, add the drained tomatoes w/ chilies, salsa, cream soup of your choice, corn and beans. Mix well and let cook till heated through, about 8 to 10 minutes. 4) Place some of the mixture down center of tortilla, top with cheese, sour cream, salsa (and/or hot sauce). Roll up and ENJOY!!

7/26/11 i made this for dinner and it was awesome. instead of any soup, i used 1 cup of cheddar cheese in a can. (normally used for dipping tortilla chips) my family loved it. thanks. mandamontana7

This is one of my most prized go-to recipes that I rely on and make often! My little trio gobbles it right up to with pieces of tortilla and little chunks of cheese! This is something my husband can't get enough of and requests pretty much every time I ask him what he wants for dinner!! You will put this on your menu time and again for sure!!
