Brown chicken in oil and arrange cooked chicken in oil sprayed pans.
Sauté onions and garlic in oil; add green peppers until tender.
Combine tomatoes or sauce, seasoning, chicken stock and sautéed vegetables and pour over chicken in pan. Cover and bake at 350 degrees for 1 ½ hours.
Thicken with more sauce or thin with more chicken stock as needed.
Serve over pasta.
