Ingredients

Chicken Cacciatore

30 – 40 lbs. boneless chicken cut into chunks

5 lbs. onions chopped

6-10 cloves garlic minced

Vegetable oil

4-5 lbs. green peppers chopped into chunks

6 lbs. sliced mushrooms

3 - #10 cans dice tomatoes or spaghetti sauce

Italian seasoning or basil oregano and parsley to taste

2 quarts of chicken stock


Directions

Brown chicken in oil and arrange cooked chicken in oil sprayed pans. Sauté onions and garlic in oil; add green peppers until tender. Combine tomatoes or sauce, seasoning, chicken stock and sautéed vegetables and pour over chicken in pan. Cover and bake at 350 degrees for 1 ½ hours. Thicken with more sauce or thin with more chicken stock as needed. Serve over pasta.
