Chicken Casserole

Ingredients

14 oz tomatoes chopped

1 ts Dried mixed herbs

parsley Freshly chopped

4 oz Button mushrooms

4 Chicken portions

1 sm Green pepper skinned and sliced

1 tb Vegetable oil

1 tb Plain flour

1/4 pt Chicken Stock

2 tb Tomato purée

2 drops Tabasco sauce

Salt and pepper


Directions

1. Heat the oil in a flameproof casserole, add the chicken and fry until lightly browned on all sides. 2. Remove the chicken from the pan with a slotted spoon. Set aside. 3. Add the vegetables to the pan and fry for 5 minutes or until softened. Stir in the flour and gradually add the remaining ingredients, stirring thoroughly. 4. Bring to the boil, cover and simmer gently for 45 minutes, stirring occasionally. 5. Sprinkle with parsley to serve. NOTES : An easily prepared tasty casserole ideal for a family meal.
