Chicken-Chili Stew

Ingredients

1 onion chopped

1/2 red pepper diced

1/2 yellow pepper diced

2 garlic cloves minced

1 tablespoon olive oil

3 chiicken breasts cooked and sliced into thin strips

1 28 ounce can diced tomatoes

1 16 ounce can pinto beans drained and rinsed

1 15 1/2 ounce can mild chili beans in chili sauce

1 cup mild salsa

1/2 package chili seasoning mix

1 8 ounce package shredded cheese for garnish

tortilla chips


Directions

Saute first 4 ingredients in oil until limp. Add next 6 ingredients, mixing well. Bring to a boil, then reduce heat and simmer for 20 minutes. Serve with cheese and tortilla chips (or corn bread).
