Chicken Enchilada

Ingredients

2 cups shredded chicken

2 cans ortega enchilada sauce

3 cups shredded colby/jack cheese

1 cup cooked white rice

1/2 tsp onion powder

8 Flour tortillas

1 tsp salt

1/2 tsp. Black pepper

1/4 tsp Chili powder


Directions

put shredded chicken in large bowl. add 1 can enchilada sauce. mix until well blended. add 2 cups shredded cheese and mix. add 1 cup cooked white rice and al spices. mix. place filling into centers of tortillas and roll up. put a little enchilada sauce in bottom on 9X13 pan and place seam-side down. cover with remining enchilada sauce and 1 cup colby/jack cheese. bake 375 for 25 minutes or until golden brown.
