Chicken in Black Bean Sauce

Ingredients

1 pound Chicken thighs skinless & boneless

1/2 teaspoon Salt

1/2 tablespoon Corn starch

2 teaspoons Reduced-sodium soy sauce

2 teaspoons Dark soy sauce

3/4 cup Red pepper diced

3/4 cup Green pepper diced

3 Scallions white & light green part chopped

3 tablespoons Vegetable oil divided

2 tablespoons Garlic minced

2 tablespoons Ginger minced

4 tablespoons Fermented Black Beans

1 tablespoon Black bean paste

1 tablespoon Shaoxing Wine

1/2 tablespoon Toasted sesame oil


Directions

1. Cut the chicken into small bite size pieces. 2. Soak the fermented beans in hot water for 15-30 minutes and rinse them a few times. 3. Place the chicken in a bowl with soy sauces, salt and corn starch. Marinate for 30 minutes. 4. Heat 1 tablespoon oil in a wok or non-stick skillet over high heat. Cook the peppers until slightly cooked but still crisp. Remove and set aside. 5. Heat 2 tablespoons oil over high heat. Cook the chicken for 2 minutes then add garlic and ginger and cook until fragrant. 6. Add the black beans and black bean paste and cook until you can smell them. Add the peppers 7. Add Shaoxing wine and stir to combine. Continue cooking until chicken is cooked. 8. Add chopped scallions and sesame oil and stir to combine.
