Chicken Meat Balls

Ingredients

400 g Chicken thigh fillets

1 Garlic crushed

1/2 ts Lemon Rind grated

1 c Soft white breadcrumbs

1 tb Lemon juice

1/2 ts Dried thyme or marjoram

1 Egg beaten


Directions

Mince thigh fillets in a food processor and empty into a bowl. Add egg, crumbs, lemon rind and juice, thyme or marjoram and garlic and mix well then season with a good pinch salt and some freshly ground black pepper. Roll into small (3 cm) balls. Place in a single layer in an oiled baking tray and bake in a hot oven (200 deg C) for 20 to 25 minutes. Serve hot with a Yoghurt and Cucumber Dipping Sauce.
