Chicken Pochero

Ingredients

1 kg cut into serving pieces

3 whole cut into 3 parts (slanting)

5 stalks

1 whole cut into 4 parts

10 stalks cut into 2

2 whole cut into 4 parts each

5 stalks

2 whole sliced(1), cut into 4(1)

2 cloves crushed

1 teaspoon

200 grams

1 pack

1 pack (optional)


Directions

In a pot, boil the chicken slices until tender, then add the onions (the one cut into 4 parts), add peppercorn and spring onions. Let it boil for 5 minutes more. Add the veggies (cabbage first then string beans and then the pechay) to the pot with the chicken. When the veggies change color or when it becomes more vibrant, remove them from the pot, set aside and turn off heat. In another pot or frying pan, fry the potato and banana. After frying, remove banana and potato, from pan, set aside and reduce oil in the pan then saute garlic and onion(sliced into 2). Add cooked chicken and tomato sauce and fish salt / patis. Cover the pot and simmer in low heat, for about 5 minutes. Put the optional ingredients, you can have it all or just one or two.. Then add the fried potatoes and bananas, add chicken stock( from the pot used to tenderize the chicken, about a cup or more). Let it boil then simmer on medium heat for 5 minutes. Add the veggies and salt and pepper to taste. Serve with hot rice.
