Chicken with Black Bean Sauce

Ingredients

1 pound boneless skinless chicken breast

1 teaspoon light soy sauce

1.5 teaspoon shaoxing rice wine

0.5 teaspoon salt

1 teaspoon sesame seed oil

2 teaspoon cornstarch

2 tablespoon groundnut oil

1 tablespoon Root Ginger fresh, fine chopped

1.5 tablespoon garlic coarsley chopped

2 tablespoon shallots finely chopped

3.5 Tablespoons spring onions finely chopped

2.5 tablespoons black beans, salted coarsley chopped

5 fluid ounces chicken stock

1 teaspoon sugar


Directions

1. Cut chicken into 2 inch chunks & place in bowl with soy sauce, rice wine, salt, sugar, sesame oil & cornflour 2. Heat oil in wok to a smoking add chicken & stir fry to 2 mins 3. Add Ginger, garlic, shallots, 1.5 tablespoons of spring onions and black beans & stir fly for 2 mins. 4. Add stock. Bring to boil, then reduce heat cover & simmer for 3 mins or until chicken is cooked. Garnish & serve with remaining spring onions.
