Chicken with Lemon And Balsamic Vinegar

Ingredients

4 tb Light stock

1 Shallot finely chopped

4 Fillets chicken breast

1 tb Honey optional

Salt and black pepper to taste

1 tb Balsamic vinegar

lemon juice

2 tb Extra Virgin Olive Oil

lemon zest Finely shredded


Directions

Season the chicken fillets with salt and pepper to taste. In a large pan, heat the shallot and the oil and gently brown the chicken fillets on each side. Add the stock, lemon zest, lemon juice and honey if used. Simmer until the chicken is cooked through. Remove to a serving dish and dribble the balsamic vinegar over the chicken.
