Chickpea salad sandwich

Ingredients

(2) 15 oz chickpeas drained & rinsed

1 cup red onion chopped

1 tablespoon relish (sweet or dill)

1 teaspoon Dijon mustard

1/2 upvegan mayo justmayo veganaise

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 easpoonpaprika

8 Hamburger buns


Directions

Grind chickpeas in a food processor for a few seconds (you can also use a potato masher if you don't have a food processor). Transfer to a bowl and mix in all the remaining ingredients. Serve on a bun with lettuce/fresh spinach and tomato. From brownvegan.com

I thought I loved CHICKEN salad sandwiches but it turns out I just love salad sandwiches! It is delicious and tasted like it had eggs in it! Also, I hate garbanzo beans. But they were delicious!
