Chickpeas and Cauliflower with Berebere Seasoning

Ingredients

1 tablespoon Olive oil

1 large Bell pepper diced

1/2 medium Onion diced

3 cloves Garlic minced (small cloves)

2 teaspoons Fresh ginger grated

1/4 cup Tomato paste

15 ounces Chickpeas drained

1/2 head Cauliflower Roughly chopped

2 cups Chicken broth

1 teaspoon Berebere Ethiopian spice

1/4 teaspoon Salt


Directions

Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and saute for about 5 minutes, until softened. Add the garlic and ginger, saute for another 2-3 minutes, until fragrant. Add the broth, chickpeas, tomato paste, cauliflower, berbere seasoning, and salt. Bring to boil and then lower heat and simmer for 20 minutes.
