Chilled Cucumber Soup

Ingredients

1 tb Honey

1/2 ts Minced garlic; (adjust up or

3 tb Chopped fresh mint

Additional chopped mint for

6 c Chopped seeded peeled

2 c Plan yogurt; (I use lowfat


Directions

Puree half of each of first 5 ingredients in food processor or blender until smooth. Transfer to bowl. Repeat with other half of same 5 ingredients. Season with salt and pepper.
