Chilli Chicken with Basil and Coconut Cream

Ingredients

500 grams Chicken Breast Fillets

2 tablespoons Ground Nut Oil

1 Onion finely chopped

2 small red chillies finely chopped

250 milliliters fresh Basil shredded

2 tablespoons fish sauce

1 teaspoon ground coriander

1 1/2 teaspoons Sugar

250 milliliters Creamed coconut


Directions

Slice Chicken into 1cm x 5cm strips Heat oil in wok, add onions and chillies, stir-fry until onion is soft Add chicken, stir-fry until chicken is tender Add Basil, coriander and sugar. Stir-fry for 1 minute Add creamed Coconut and stir until mixture is heated through Serve immediately

Really simple and tasty curry. Try adding cherry tomatoes, lemon grass and pineapple chunks for a real thai taste!
