Chocolate Chip Pancakes

Ali says these are THE best pancakes ever! She even eats them cold for lunch. Adapted from The Sneaky Chef

Ingredients

0.75 cups pancake mix I use a mix of Aunt Jemima's whole wheat and regular

1 cup unsweetened applesauce

1 cup plain yogurt

1 teaspoon vanilla extract

2 tablespoons milk

1 large egg

2 tablespoons honey or pure maple syrup

1 cup Chocolate chips


Directions

Measure pancake mix into a large bowl. In another bowl, whisk together the applesauce, yogurt, vanilla, milk, egg, and honey (or maple syrup). Add the wet ingredients to pancake mix until they are blended. If the batter is too thick, add a little more milk. Add the chocolate chips and mix lightly. Butter or spray a large skillet over medium heat. Drop tablespoons of batter onto the skillet in batches. Cook until golden then flip. Cook 2-3 minutes on the other side.

I used Greek yogurt and found the batter to be very runny. I added 2 tbs pancake mix to thicken but still had a problem getting pancakes to cook through. I am not experienced at making pancakes so it could have been my fault and not the recipe.

Great recipe. I would normally just dump chocolate chips in pancake mix batter so I loved trying this. Very delicious but for my preference I'm taking out syrup to reduce amt of sweetness next time. WiWiWWThwissomethin

Great recipe! I made them for my husband on Father's Day & he loved them! They were a little too sweet for my liking, but that's just because I'm not a big sweets person. Next time I'll probably cut the chocolate chips by half.
