Chocolate Espresso Bean Cookies

Chewy cookies that replaces chocolate chips with chopped espresso beans

Ingredients

2 + 2 Cups / Tbsp Flour

1/2 teaspoon Baking soda

1/2 teaspoon Salt

12 tablespoons Unsalted butter melted and cooled

1 cup Brown sugar packed

1/2 cup Sugar

1 +1 large Egg + Egg Yolk

2 teaspoons Vanilla extract

1 1/2 cups Chocolate covered espresso beans cut in half


Directions

Preheat oven to 325 Combine Flour, Baking soda and Salt In mixer cream butter and both sugars until smooth. Add eggs and vanilla. Turn mixer to lowest setting. Slowly add dry ingredients until just mixed. Mix in the espresso beans by hand until mixed in. Taking 2 tbsp roll into a ball and space 2 in apart on the baking sheet. Bake for 15 - 20 min
