Chunky Coconut, Tomato, Cucumber And Lime Relish

Ingredients

15 Cm cucumber; skinned, seeds

; chopped

; roughly chopped

; removed and roughly

Salt

1/2 Fresh coconut; grated or

1 tb olive oil

1 Limes; juice of (1 to 2)

8 Cherry tomatoes; quartered

1 sm Hand basil; roughly chopped


Directions

1 Put the tomatoes, coconut, basil and cucumber into a bowl and toss. Just before serving, toss in the olive oil, salt, pepper and lime juice to taste. Recipe by: The Naked Chef
