1 bunch scallions thinly sliced
1/2 bunch cilantro leaves and tender stems only
2 garlic cloves chopped
1 teaspoon finely grated lime zest
1 teaspoon finely grated orange zest
1/4 cup fresh lime juice
1/4 cup fresh orange juice
1/4 cup reduced-sodium soy sauce
2 tablespoons vegetable oil
1 tablespoon kosher salt
2 pounds skin-on bone-in chicken thighs
marinated it for about 40min and still had good flavor. Also poured all (except for the 1/4 cup it says to put aside) the marinade on the chicken when I cooked it.
jklaubeExcellent marinade. Used parsley instead of cilantro, doubled orange zest (since had no lime zest), and sesame oil instead of vegetable oil. When cooking, broiled it till brown on each side (took about 10-15min per side), then baked at 350 till fully cooked (about 15 more min).
