Classic Gazpacho

If you've never had gazpacho, you don't know what you're missing. Essentially a cold soup, it's a refreshing starter in the heat of summer when you don't want something hot, but can't eat another salad. This classic tomato version is easy, refreshing and sure to become a staple in your house. (I'm thinking about trying it as the base for a Bloody Mary!)

Ingredients

4 each tomatoes large, ripe, rough chopped

1 each onion small

1 each cucumber medium, peeled & chopped

1 small bunch fresh parsley

1 clove garlic smashed

1 each lemon juice fresh squeezed

1 cup ice water

to taste Freshly ground pepper

1 each avocado diced (as topping)


Directions

Put all ingredients except avocado in a blender or food processor and process until vegetables are finely chopped. If you would like a pureed soup, continue blending until desired consistency. Season with freshly ground black pepper to taste. Chill for at least 1 hour and serve cold; top with diced avocados.
