Coconut Caramel Sauce

This sauce is a favourite with children. Serve spooned over cake, pikelets or waffles, or use as a topping for ice-cream.

Ingredients

70 grams Butter

120 grams Brown sugar

125 ml Coconut cream

1 teaspoon Lemon juice


Directions

1. Melt the butter in a small saucepan over medium-low heat. Add the sugar and stir constantly until dissolved. 2. Reduce the heat to low. Add the coconut cream and lemon juice and gently simmer, stirring occasionally, for 10 minutes. Do not let the sauce come to the boil or the coconut cream could separate. 3. Remove from the heat and cool for 5 minutes before serving.
