Ingredients

4 Cornish Game hens cut in half

1 cup Olive oil

1/2 cup Soy sauce

1 bunch Fresh rosemary

1 bunch fresh thyme

1 tablespoon arrow root (or corn startch)

1 cup Dijon mustard

4 lemons juiced

2 cloves Garlic minced

1 Salt and pepper to taste

Directions

Heat oven to 350; Place hen pieces on a roasting pan. Mix all other ingrediants (cept fresh herbs) in a bowl for the marinade. Once mixed pour over the hen halfs. Top with the fresh herbs, cover and bake for 45 minutes. At 45 minutes pull the hens out of the oven. Add more marinade if needed, uncover and bake until the birds are golden brown and cooked throughout. Remove hens from pan to a serving platter. Then on top of the stove place your roasting pan on a burner over medium heat. Mix 1/2 of the remaining marinade with the arrowroot (or corn startch) return the mix to the pan and the remaining marinade, simmer until thickened. I like to make a sausage stuffing to serve with thease.
