Corny Cornbread

Ingredients

1 cup Cornmeal

.5 cup coconut flour

.5 cup buckwheat pancake mix

1 teaspoon Salt

1 tablespoon Sugar

1 tablespoon Light brown sugar

1.5 teaspoon Baking powder

.5 teaspoon Baking soda

2 large Eggs whisked

1.5 cup Buttermilk

7 tablespoons Melted Butter

.5 cup Half-and-half cream

.5 cup 2% Milk

1 can sweet corn drained


Directions

Sift together all dry ingredients in a large bowl. Whisk all liquid ingredients together in a medium bowl. Add liquid ingredients to dry ingredients until just moistened. Batter should be like think pancake mix. Add milk as needed until desired consistency is reached. Drain corn and fold into mixture. Do not over mix otherwise your bread will be tough. Spray baking dish ( I used 9x9 clear glass ) with coconut spray. If any extra batter pour into smaller sprayed pan. Bake at 400-425* for about 20-25 minutes until golden brown and toothpick pulls out clean.
