Country Corn Bread

This light and tasty corn bread is great for breakfast. My husband likes it with sugar and milk. We grow and grind our own corn, which makes it taste even better!

Ingredients

1/4 cup butter melted

1/2 cup sugar

3/4 cup corn meal

3/4 cup all-purpose flour

1 1/2 tsp baking powder

1/4 tsp salt

1 Egg lightly beaten

3/4 cup milk


Directions

Melt butter in medium bowl, in the microwave. Add sugar, corn meal, flour, baking powder, and salt. Combine egg and milk, add to other ingredients. Mix by hand until blended. Pour into greased 8"X8"X2" baking dish. Bake at 350 degrees for 20 minutes, until toothpick inserted in center comes out clean.

This is the only cornbread my family will eat now. It is amazing. I change the sugar for 1/4 cup sugar and 1/4 cup honey. Actually I just squeeze some honey in without measuring but it approximately 1/4 cup. Anyway, we love it.

I reduced the sugar to 1/4 cup, otherwise followed the recipe. I am really happy with this bread. I will make more again.
