Couscous and Feta Mediterranean Salad

Ingredients

1 cup Couscous large "jewel" type

1 whole cucumber Split lengthwise and seeded

1 tablespoon White wine vinegar

3 tablespoon Olive Oil

1 teaspoon kosher salt

1/2 teaspoon Freshly ground pepper

1/3 cup Kalamata Olives Pitted and chopped in half

1/2 teaspoon Dijon mustard

2 tablespoon cilantro chopped

1 can Chickpeas rinsed, drained and dried

2/3 cup Feta cheese

3 sliced scallions

2 Carrots peeled and chopped finely


Directions

Mix dressing -- whisk olive oil, vinegar, mustard, salt and pepper to taste. Prepare couscous and remove from heat. Cool slightly and add to bowl, along with tomatoes, olives, cucumber, chick peas. Stir. Let sit until it comes to room temperature. Add feta cheese and cilantro, and serve.
