Cream Cheese Cranberry Muffins

Ingredients

1 cup butter, softened

8 oz. Cream cheese, softened

1 1/2 cups Sugar

1 1/2 teaspoons vanilla extract

4 Eggs

2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

2 cups fresh or frozen cranberries

1/2 cup chopped pecans


Directions

Preheat oven to 350 degrees. In a large mixing bowl, cream butter, cream cheese, sugar and vanilla. Add eggs, one at a time, beating well after each addition. Combine the flour, baking powder and salt. Stir into the creamed mixture just until moistened. Fold in cranberries and pecans. Fill muffin cups 3/4 full. Bake 20-25 minutes or until a toothpick comes out clean. Cool 5 minutes before removing from pans to wire racks. Serve warm.

Thought they would be sweeter but they turned to be just nice. I added some powdered sugar and it made them better.
