Creamy Sausage and Peppers Pasta

Ingredients

8 ounce Pasta uncooked

1 pound Italian Sausage

1 Tbsp Olive oil

1/2 medium Onion chopped

1 medium Red bell pepper chopped

1 medium Yellow bell pepper chopped

1 Tbsp Butter

2-3 cloves Garlic minced

1 tsp Flour

1 cup Heavy Cream

1/2 tsp Dijon mustard

2 cups Fresh Baby Spinach

Salt & Pepper to taste

Parmesan freshly grated


Directions

1. Boil pasta according to package directions. 2. Brown the Italian sausage over medium-high heat; drain. 3. Add the onions and bell peppers to a skillet and cook in olive oil. Cook until the onion is lightly brown and the peppers have softened (about 7 - 8 minutes). 4. Reduce the heat to medium, add the butter and garlic to the skillet. Once the butter melts, sprinkle in the flour and cook for about a minute; stirring well. 5. Stir in the heavy cream and Dijon mustard. The sauce should thicken quickly. 6. Add the cooked sausage and spinach to the skillet and stir/toss. 7. Toss with the cooked; drained pasta. Toss until the spinach has wilted and the pasta is coated in sauce. 8. Serve immediately with salt, pepper and parmesan cheese.
