Ingredients

1 small to med Onion finely chopped

3 Shallots finely chopped

2 cloves garlic finely finely chopped

-1/4 less cup Butter and bacon fat

1 lb Ground pork

3/4 cup Dry breadcrumbs 2 cups bread(cube)2 o3 slices

1+ cup Milk

1/2+ cup Chicken broth

1/4 teaspoons nutmeg

1/4 teaspoons Savory

1/4 teaspoon Fennel

1/8 teaspoon cloves

Salt and pepper


Directions

In a saucepan, sweat the onion, shallots and garlic in the butter. Add the pork, milk, chicken broth and spices, making sure to blend well. Season with salt and pepper. Cover and simmer over very low heat for one hour, stirring occasionally.Add breadcrumbs and cook, uncovered, for 30 minutes or until some of the liquid has evaporated.
