Category: Main Dish
Cuisine: Caribbean
10 (2 lbs) chicken thighs skinless, boneless, fat trimmed
1 small onion diced
1 clove garlic crushed
1 bell pepper chopped, or sliced
2 tablespoons alcaparrado or capers (pitted spanish olives)
8 oz canned tomato sauce
1/4 teaspoon oregano
1/4 teaspoon cumin
salt to taste
1 bay leaf more if wanted
1/4 cup cilantro chopped, plus 2 TBL more for serving
A little bland...could use some re-seasoning at the end. I used capers instead of olives.
