Crock Pot Chili Chicken

Very easy "dump dinner" recipe.

Ingredients

3 Chicken breasts boneless and skinless

1 package reduced sodium Taco Seasoning

2 tablespoons Flour

1 1/2 cups chunky salsa strained

1 can chili with no beans

1 can Kidney beans rinsed

1 cup frozen corn

1 chipotle chili in adobo sauce chopped (optional- *see note)

2 green peppers sliced

1 onion sliced

cooked rice

sour cream

pepper jack cheese (or cheddar) grated


Directions

1. Dump salsa, chili, beans, corn and chipolte chili into crock pot and stir. 2. Put taco mix and flour in a ziploc bag and shake chicken breast one at a time to coat. Sink into salsa mixture in the crock pot. Cook on low for 6-7 hours. 30 minutes before you are ready to serve... 3. Start cooking the rice according to package directions. 4. Take two forks and shred your chicken. (I do it directly in the pot.) Continue cooking on low. 5. Warm a large skillet (medium high heat) with a little oil and add your green peppers. Stir and cook for 5 then add your onions. Sauté to desired texture. Place rice on plates. Top with chicken and vegetables. Add cheese and sour cream as needed.

so good! and so easy! this is the first thing i made using my brand new crock pot. i had to google a different way to cook it since i didnt have 7 hours today, so i can vouch for 3 hours on high heat being just fine! from what i read, the longer time on low heat probably makes it more tender, but this is SO good. it's a mild but flavorful dish. the sauteed peppers and onions really top it off well. even the corn adds a flavor that i dont think it could go without. still waiting on a final concensus from the +1, but i think this meal is going to become a regular in our house. thank you! oh- my only advice is to make a bunch more sauteed onions and peppers. probably at least double. unless you have pretty big peppers and onions. my peppers were small.

This is my recipe and I think its great because it's easy, relatively cheap, and my family loves it. You don't have to mess up every dish in the house to make it, either.
