Crunchy Waffle

Ingredients

1 1/2 cup Whole wheat flour

2 teaspoon Baking Powder

1/2 teaspoon Ground ginger

2 large Eggs

1 1/2 cup Buttermilk or 1 cup buttermilk & 1/2 cup water

1/4 cup Maple Syrup or honey

1/4 cup Vegetable oil

1/2 cup Pecan finely chopped

Plain yogurt to serve

1 1/2 cup Maple syrup

1 cup Sliced bananas

2 cup Strawberries hulled & halved


Directions

Total time: about 30-40 minutes 1. Waffle: Combine dry ingredients; stir well. 2. Beat eggs until thick and lemon colored. Add flour mix, buttermilk, syrup and oil. Beat until smooth. 3. Cook on hot, lightly oiled waffle iron, sprinkling the top with chopped pecans before cooking. 4. Strawberry-Banana Sauce: Combine all ingredients in a heavy saucepan. Cook over medium high heat 10 minutes, stirring occasionally, serve hot. 5. Serve with topping of the following sauce and plain yogurt.

A good, moist waffle. I added a mashed, ripe banana in place of a half cup of milk. Used milk soured with 2T vinegar as I had no buttermilk.
