Fresh Fruit Salad with Honey, Mint & Lime Syrup

A refreshing dessert on its own or spooned over vanilla ice cream. This recipe can be prepared in 45 minutes or less.

Ingredients

1/4 cup Fresh lime juice

1/4 cup Honey

1/4 cup fresh mint chopped

1 3-pound cantaloupe halved, seeded, and chopped

1 12-ounce basket strawberries hulled, sliced

4 medium kiwis peeled, cut into 1/2-inch pieces

1 1/2 cups seedless grapes


Directions

Whisk lime juice, honey and mint in large bowl to blend. Using melon baller, scoop out cantaloupe. Add all fruit to syrup in bowl; toss to combine. Let stand 15 minutes to allow flavors to blend. (Can be made 3 hours ahead. Cover and chill.) Spoon fruit into goblets.

Best fruit salad ever! I usually leave out the cantaloupe and if there are any leftovers I blend it up and make popsicles, which are amazing!

Wow! This was so delicious and refreshing, a great addition to our Easter dinner. I chopped all of the fruit the night before and kept each type in separate zipper bags until it was time to eat. The syrup was also prepared ahead to develop flavor so my time invested on the big day was less than 3 minutes. The only change I made to this recipe was that I steeped dried mint in 1/4 cup hot water for 10 minutes and strained the leaves out since I don't have fresh mint.
