Ingredients

2 1/4 cups currants

2 1/4 cups raisins

1 cup sugar + 2 tbsp

1 cup water + 2 tbsp

6 apples Large or 7 medium

4.5 tablespoons butter

1.5 teaspoon allspice

1.5 teaspoon Cinnamon

CRUST

6 3/4 cups flour crust

2 eggs crust

5 1/2 sticks butter crust

3 1/2 tbsp water, chilled crust

2 1/4 tablespoon white vinegar crust

2 1/4 teaspoon salt crust


Directions

*Note-filling mount was increased, dough needs adjusted Preheat oven to 425. Filling -Dice apples in food processor. -Mix all ingredients and simmer over medium heat until water is absorbed and mixture darkens. Chill overnight. -Place mixture on cookie sheet, about 1/2 thick. -Roll out remaining dough and place over top. Prick with fork all over. Brush pasty with egg wash and sprinkle generously and evenly with sugar. -Bake pastry for 30 minutes or until crust is golden brown. remove from oven and immediately sprinkle again with sugar. Crust -Cup butter into flour and salt. -Combine egg, water and vinegar with fork. -Pour liquid mixture into flour, blend with fork. -Divide dough in half, roll out to cover 17.25 x 12.25 half sheet. Prefer darker pan (USA Pan Half sheet with fluted bottom)
