Preheat oven to 425.
Filling
-Dice apples in food processor.
-Mix all ingredients and simmer over medium heat until water is absorbed and mixture darkens. Chill overnight.
-Place mixture on cookie sheet, about 1/2 thick.
-Roll out remaining dough and place over top. Prick with fork all over. Brush pasty with egg wash and sprinkle generously and evenly with sugar.
-Bake pastry for 30 minutes or until crust is golden brown. remove from oven and immediately sprinkle again with sugar.
Crust
-Cup butter into flour and salt.
-Combine egg, water and vinegar with fork.
-Pour liquid mixture into flour, blend with fork.
-Divide dough in half, roll out to cover 17.25 x 12.25 half sheet. Prefer darker pan (USA Pan Half sheet with fluted bottom)
