Gluten Free Buffalo Chicken Pizza

Ingredients

1 3/4 cups cornmeal

2 cups gluten-free flour blend

1 tablespoon baking powder

2 teaspoons coconut sugar

1 cup coconut milk full fat

1/2 cups canola oil

16 ounces Ricotta Cheese part skim

8 ounces Chicken cooked and shredded

2 tablespoons buffalo wing sauce more or less to taste

4 tablespoons Blue cheese dressing

8 ounces Sharp Cheddar cheese shredded


Directions

Preheat oven to 375 degrees. To make crust: In large bowl, whisk together cornmeal, gluten free flour blend, baking powder and sugar. Mix in milk and oil. Add more milk if dough is too dry. Dough should come together, but will not be sticky. With rolling pin, spread dough on greased cookie sheet (18" x 12"). Bake crust 7 minutes. To make pizza: Spread ricotta cheese over entire crust. Mix chicken with with wing sauce. Spread on top of ricotta. Top with blue cheese dressing and cheddar cheese. Bake 20 minutes, until cheese is begining to brown.
