Gnocchi & Summer Squash

Ingredients

3/4 lb Gnocchi

4 ounces Cherry Tomatoes

2 cloves Garlic

4 ounces Sweet Peppers

1 Summer Squash

2 tbsp Butter

2 tbsp Shaved Parmesan Cheese

Olive Oil

Salt and Pepper


Directions

Boil a salted water, add Gnocchi and cook for 3-4 minutes or until Gnocchi floats Halve the Squash lengthwise, then cut into 1/4 inch think slices Halve the Peppers lengthwise and thinly slice crosswise Peel and roughly chop Garlic Halve the Tomatoes and season with Salt and Pepper In a large pan, heat Olive Oil over medium heat Add the Squash and cook without stirring for 2-3 minutes or until lightly browned Add the Peppers and Garlic, cooking for 1-2 minutes stirring occasionally Add the Tomatoes, cooking for 1-2 minutes stirring occasionally Add the finished Gnocchi and Butter to pan of Vegetables Cook, stirring vigorously, for 1 minute Divide into two bowls and serve
