Grandma Pat’s Caramel Corn

Ingredients

6 qts Popcorn popped, plain

1 C Butter

2 C Light brown sugar

1/2 C Karo syrup, light (sub ideas in notes)

1 tsp Salt

1/2 tsp baking soda

1 tsp Vanilla


Directions

Pop popcorn and place in roaster. Cook butter, brown sugar, Karo syrup (or maple syrup) and salt. Stir to boiling. Boil without stirring for 5 minutes. Stir in baking soda and vanilla. Pour mixture over popcorn and stir. Bake @ 250 for 1 hour, stirring every 15 minutes. Pour out of roaster onto jelly roll pans to cool. NOTE: Sub pure maple syrup for karo syrup . Be careful not to boil too long.
