Grandma's Vegetable Beef Soup

Ingredients

1 pound Stew meat

46 ounces Tomato juice

1/4 can Water

1 Onion chopped

1 clove Garlic chopped

1 stalk Celery and leaves if you have them

1 Carrot

1/4 Green pepper

dash Red pepper

3 cups Frozen Vegetables zucchini, eggplant, peas, carrots, green beans, etc.

2 teaspoons Salt

Black pepper to taste

Garlic powder to taste

1/2 teaspoon Marjoram

1/2 teaspoon Thyme

2 Bay leaves

1/2 teaspoon Basil

Water as needed

Noodles optional

Barley optional


Directions

In a soup pan, add partially frozen stew meat, tomato juice and water. Put on stove on high. Add rest of the ingredients. Stir and taste. Add more water if necessary. Simmer. (The longer the better.) 1/2 hour before serving add barley or noodles. Bring to a boil and simmer.
