Granny Smith Jnr's Tomato and Bacon Pasta Sauce

One of a series of family recipes for pasta sauces all having been made and eaten for years.

Ingredients

4 small Onions chopped

12 ounces Streaky bacon chopped

1 tablespoon Creme fraiche

1 400 gms tin Chopped Tomatoes

1/2 teaspoon Chopped basil

1 large Green pepper chopped

3/4 tin tomato puree

1/2 glass White wine

1 tablespoon Lemon juice

3 ounce Green peas if required

1 single Bay leaf

1 qty Salt, garlic salt, pepper

1 qty Olive oil as required

1 large knob Butter


Directions

Fry onions in butter and oil till soft. Add the bacon and fry till cooked. Add flour and stir into the butter and olive oil. Add the tomatoes, puree, wine and herbs and cook out the flour. Add the green pepper and simmer for about 1 hour. Add peas, if wanted, 10 minutes before serving. Serve with the pasta of your choice.
