Gratineed Tomatoes with Asiago and Fresh Herbs

Ingredients

Extra Virgin Olive Oil

3 medium beefsteak tomatoes (sliced 1/4 inch thick)

kosher salt and freshly ground black pepper

1/4 cup panko bread crumbs

1/4 cup finely grated Asiago cheese (or you can substitute Parmesan)

1 TBL fresh flat leaf parsley

1 tsp coarsely chopped fresh thyme


Directions

1. Position a rack 6 inches from the broiler element and heat the broiler on high. 2. Lightly oil a 10x12-inch (or similar size) broiler-safe baking dish. 3. Arrange the tomato slices in the baking dish in a single, slightly overlapping layer. 4. Sprinkle with 1/4 tsp salt. 5. In a small bowl, mix together the breadcrumbs, Asiago, parsley, thyme, 2 tsp. olive oil, a pinch of salt, and 1/8 tsp. pepper. 6. Sprinkle the breadcrumb mixture evenly over the tomatoes. 7. Broil until the breadcrumbs are a deep golden-brown, 2 to 3 minutes. 8. Drizzle with more olive oil and serve immediately.

Husband and I both loved it. I'm really not that big of a tomato eater either! It was easy, quick and tasty!

I made this with the tomatoes I grew in my garden. I did not like the tomatoes for snacking on (not juicy at all) but for cooking they are fabulous. The first day I made this I wasn't wowed but I heated a serving up the next day, added some homemade pesto sauce and I was in love!!
