Green Chili Rice

One of our favorite side dishes. Goes great with burgers or steak.

Ingredients

1 cup White rice uncooked

8 ounces Sour cream

1 small can Green chili

8 ounces Sharp cheddar cheese shredded


Directions

Cook the rice according to package directions and allow to cool slightly. Mix sour cream and green chilis into rice. Put half of rice mixture into casserole dish and spread half the cheddar cheese on top. Add the rest of the rice, and top with remaining cheese. Bake uncovered at 350-F for 30 minutes. Pepper Jack Alternative: Replace cheddar with pepper jack cheese. Mix half the shredded cheese directly into the rice when you add the sour cream and green chilis. Put entire mixture into casserole and top with remaining pepper jack cheese. Bake as directed above.

Everyone loves this, I made a substitution of greek yogurt & pepperjack cheese.

Can substitute Pepper Jack cheese for cheddar. We've been mixing most the cheese with the rice/sour cream, not layering it, and it's just as good. Just save some cheese to bake on top. [I posted this recipe.]
